In our Hostaria, Tuscan cuisine isn’t just prepared — it’s told. Our Chef
Maurizio Cambi
Born and raised in Tuscany, Chef Maurizio is the soul of our Hostaria. After his early experiences in Florence and a few years in London, he chose to return to his roots, settling among the gentle hills of San Gimignano. His cuisine is an act of love for our land: each dish holds memories of tradition and the fragrances of the past, reimagined with creativity and respect for the seasons. In his hands, local ingredients are transformed into an explosion of flavors meant to be savored, bite after bite.
The Setting

Step into our two dining rooms, where soft lighting and warm décor create an intimate and refined atmosphere. Shelves lined with wine bottles tell the story of our passion for Tuscany and its flavors. In the warmer months, the blooming courtyard becomes the heart of the restaurant: tables beneath the summer sky, a stone well at its center, and a timeless romantic mood that turns every dinner into a memory to treasure.
