Mouth-watering

This week together with our Chef Maurizio Cambi we created the menu with which we will start the season 2021.

By now, the friends and guests of the Hotel Casolare le Terre Rosse know very well that our menu is dynamic and varies according to seasonal ingredients. The dishes are always those of the Tuscan tradition enhanced by the curiosity of the chef who loves to experiment and let us know new aromas and flavors.

Among the cold dishes we propose Chianti tuna, cabbage salad, yogurt and caramelized onion.

Do you know what Chianti tuna is? No, it’s not fish! It’s pork. It’s an ancient recipe from the '50s where the meat is processed into tuna pulp. Are used juniper berries, white wine, rosemary, extra virgin olive oil, all products of our territory that give a light and delicate taste.

Among the first vegetarian dishes, we suggest Tagliolini wholemeal, artichokes, pistachio cream, thyme.

Besides, all pasta all'Hostaria Terre Rosse is homemade.
