Chef Maurizio Cambi from Hostaria Terre Rosse

Today we want to introduce you to Chef Maurizio Cambi from Hostaria Terre Rosse.

Maurizio is a Tuscan doc, from Castelfiorentino, a small town a few kilometers from San Gimignano. His mother Kenya, a fierce woman born in Cecina on the Tyrrhenian coast, was his inspiration and even today they spend hours talking about cooking.

Maurizio attended the A. Saffi Hotel Institute in Florence and practiced in various kitchens of local restaurants. One day he decided to live an experience abroad and chose London, where he worked in various restaurants and hotels, always bringing his Tuscan soul to the dishes.

Twenty years ago he decided to take root in San Gimignano, where he found a job stability and love ;)

His cuisine is influenced by the respect for his land, Tuscany, and the flavors and aromas of tradition reign in his dishes.

He loves cooking meat, grilled meats, stews, and creating curious dishes such as dumplings with ribs.  Peppers, aubergines and courgettes are among his favorite vegetables, which he passionately enhances in the Hostaria's stoves.

Chef Maurizio defines himself as a small country chef, but for us he is much more.
